Assyrtiko
Ages in old French oak barrels for 8 months
ACIDITY: high
BODY: medium
TANNIN: no or low
LENGTH: medium +
EYE: straw yellow, concentrated core, thin towards the rim
NOSE: green apple, grapefruit, touch of vanilla, waxy lanolin, lemon cheesecake
MOUTH: seawater, tea cakes, green tea, vanilla, cardamon, slight oiliness, smacking lemon acids come later
RUMINATIONS: The palate is richer than expected from the influence of new oak, thought not overwhelming, it has added layers to the bouquet, giving us a dry white wine, ripe with floral and herbaceous aromas, that offers more of the ginger and smoke and body that one would expect from a much older Assyrtiko. Serve extra chilled.
COMPARABLES: Trocken Riesling, dry Alsace, Albariño, Grüner Veltliner
PAIRING: chilli, spice and all things nice, asian food, raw fish, grilled fish, oysters, urchins, wild mushroom risotto, pork, pickles
